    Default Macaroni & Cheese Casserole w/Ham

    [LIST]
    salt & fresh cracked pepper
    4 cups elbow macaroni
    4 tbsp. butter
    3 onions chopped
    1/2 cup flour
    4 cups milk
    1/4 tsp. cayenne pepper
    5 cups shredded cheese- reserve 1 cup for topping (I use no-name bag pre-shredded cheddar/monterey jack blend)
    ham- diced small (I use PC Vermont Honey Ham)
    2 slices white sandwich bread

    -pre-heat oven to 375 degrees
    -cook macaroni in salted boiling water until 'al dente', drain & set aside
    -melt butter in lg. saucepan, add onions, salt & pepper and cook over med/high heat until onions are softened & browning
    -whisk in flour & milk; cool whisking often until mixture is thick & bubbely
    -stir in cayenne pepper & cheese
    -remove from heat and stir in macaroni & ham; transfer to lg. baking dish
    -in food processor, pulse bread until lg. crumbs form, toss with remaining 1 cup of cheese. Top casserole with breadcrumb mixture.
    -Bake until top is golden brown- about 30 min.
