    Ashley - you've posted some amazing recipes. Here is one that is quick, easy and can be made ahead of time.

    Chicken Spaghetti Bake
    Prep: 15 Minutes
    Bake: 20 Minutes

    3 ounces uncooked spaghetti
    1/3 cup chopped green peppers
    1/3 cup chopped onion
    1 garlic clove, minced
    1 tablespoon butter
    1 cup cubed cooked chicken breast
    1 can (8 ounces) tomato sauce
    1/3 cup condensed cream of mushroom soup, undiluted
    1/4 cup chopped fresh mushrooms
    2 teaspoons Worcestershire sauce
    1/2 teaspoon hot pepper sauce
    1/8 teaspoon pepper
    2 tablespoons grated Parmesan cheese

    Cook spaghetti according to package directions. Meanwhile, in a small skillet, saute the green pepper, onion and garlic in butter until tender. In a large bowl, combine the green pepper mixture, chicken, tomato sauce, soup, mushrooms, Worcestershire sauce, hot pepper sauce and pepper.

    Drain spaghetti; stire into chicken mixture. Transfer to a 1 qt. baking dish coated with nonstick cooking spray. Bake, uncovered, at 350 for 20-25 minutes or until heated through. Sprinkle with Parmesan cheese.

    Yield: 2 Servings

    I typically double this recipe and omit the hot pepper sauce for the kiddies. Enjoy!

    Sloppy Joes

    1/2 pound ground beef
    1/2 cup ketchup
    2 tablespoons water
    1 tablespoon brown sugar
    1 teaspoon Worcestershire sauce
    1 teaspoon prepared mustard
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon salt
    2 hamburger buns, split


    In a saucepan, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, water, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder and salt. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes. Serve on buns.

    I always double the recipe and use extras for lunches or freeze it for a quick dinner. I also omit the onion powder because I never have any on hand.
